Blistered Tomato, Roast Garlic and Fresh Herb Gluten Free Pizza Recipe with Almond Flour

Years ago I was a big fan of pizza. Not that I’m not still a fan of pizza, but frankly all that yeast and gluten does me and my body no favours! Love the taste, however, and so out of that appreciation we have come up with a perfect fresh gluten free pizza recipe. It still captures all the gorgeous fresh flavours of Italy without the horrid effects of gluten because we got rid of them! Yaasss.

This gluten free pizza is awesome on its own, with a side salad, or as a side beside a main meal. You could spruce it up with some protein. How about garlic prawns  (which would make the pizza amazing) or other veggie inclusions, such as artichokes or olives. It really doesn’t need it though, it really is perfect on its own. The sweetness from the roast garlic elevates the taste. The blistered tomatoes adds incredible roasted flavour. The herbs lend the lively freshness to hold it all together.

Be warned though, this pizza needs to be made in a double quantity because it is so good!

This dough can also be made into a sweet dish, such as a fruit galette or a family danish.  Keep the recipe on hand to make a bunch of different things.

Ingredients

Gluten-free Pizza dough

  • 100g Almond Flour
  • 25g Coconut flour
  • 2 tsp Xanthin Gum
  • 1 tsp Baking Powder
  • 1/4 tsp Sea Salt
  • 2 Tbs Lemon Juice
  • 1 Egg
  • 5 tsp Filtered water

Pizza toppings

  • 2 Tbs Dried Italian Herbs, (oregano, basil, thyme, parsley)
  • 6 cloves Garlic
  • 1 cup Fresh basil leaves
  • 1 cup Fresh parsley leaves
  • 200g Baby or cherry tomatoes, (use a mixture if you can)
  • Extra Virgin Olive Oil
  • Sea salt
