Granola 3 Ways

Granola, or Muesli as it’s otherwise known as, is a great breakfast or after school meal. I love that it can come in so many different flavours. And then of course you can really be specific about adding or subtracting ingredients to make it just how you like it. Such a plus when everyone has so many specific food intolerances. Not to mention different taste preferences.

So what a great recipe to show you how you can change it up to accommodate all that. We bring you 3 different flavours, and 3 different types of Granola:

  1. Paleo Maple Pecan Granola
  2. Gluten free Vanilla Berry Granola
  3. Keto Cinnamon Donut Granola.

What’s the difference?

Technically all 3 are gluten free, so that’s a bonus. And the Keto one is also technically Paleo too. But basically, the Gluten Free still has grain in the form of gluten free oats. The Paleo granola has no grains but still has fruit in the way of sultanas. The keto has no sugar or fruit, and definitely no grains.

And the of course there are the different flavours. So if you wanted a maple pecan keto granola you can definitely mix up the flavours. Just omit the cinnamon and up the maple essence instead (but no maple syrup as that’s a sugar). You get the gist with mixing and matching flavours though.

After baking

So just a heads up that after baking, the keto and paleo granola will appear very oily. But wait until they cool down and the oil will have solidified and absorbed to leave a gloriously crunchy and magnificent cereal. You will want to store them in air tight containers in the pantry, and we recommend the keto one to go in the fridge because of the addition of egg. How long will they last? I don’t know to be honest. They get eaten in our house so quick that particular question has never been needed to be asked!!

Serving the granola

We recommend making your own nut milk or plant based milk to serve with these beauties. BUT they are so good that they will serve as snacks too. Just crunch on them dry for a very satisfying in between meal pick me up.

Healthy Gluten Free Granola

Granola recipes made 3 ways and 3 flavours! Paleo Maple Pecan, Gluten Free Vanilla Berry and Keto Cinnamon Donut Granola to make at home.

Ingredients

Paleo Maple Pecan Granola

  • 1 cup Unsweetened Coconut Flakes
  • 1 cup Pecans
  • 1/2 cup Almonds
  • 1/4 cup Raw Pumpkin Seeds
  • 1/4 cup Raw Sunflower Seeds
  • 1 tsp Vanilla
  • 2 Tbs Coconut Oil
  • 1/4 cup Maple Syrup
  • 1/2 tsp Maple Extract

Gluten Free Vanilla Berry Granola

  • 2 cups Gluten Free Oats
  • 1 cup Raw Almonds
  • 1/2 cup Pumpkin Seeds
  • 2/3 cup Dried Berries (blueberries, strawberries etc)
  • 1/2 cup Flaked unsweetened Coconut
  • 1/4 cup Maple Syrup
  • 1 tsp Vanilla
  • 3 Tbs Coconut Oil

Keto Cinnamon Donut Granola

  • 1 cup Slivered Almonds
  • 1 cup Walnuts
  • 1/3 cup Pumpkin Seeds
  • 1/3 cup Sunflower Seeds
  • 1/4 cup Chia Seeds
  • 1/4 cup Toasted Sesame Seeds
  • 8 Tbs Erythritol (or Xylitol)
  • 1 Egg White
  • 1/4 cup Coconut Oil
  • 1 tsp Cinnamon Powder
