We know these lovely pastries as danishes however, do you know that the origin of the pastry is not from Denmark? Yes, these pastries came to Denmark with Austrian bakers. Specifically, the Danish pastry came from Vienna during the 1850s when Denmark’s pastry workers started long-term strike for wage. The Austrian bakers didn’t know about the baked goods of Denmark, so they introduced their own traditional baked goods with the buttery dough filled with varieties of fillings, like jellies, fruit, almond pastes, and nuts. It didn’t take long for the Danish pastry to become popular all across Denmark. So, the demand continued even after the strike finished. In Denmark, this type of pastries is known as Viennese.
Traditionally a danish pastry is made with puff pastry, with layers and layers of butter between sheets of flour pastry, making it quite light. Ours is closer to a shortcrust pastry but its not without it’s own lightness and crispy texture making it super scrumptious!
